Aunt Doris’s Zucchini Relish

Ingredients

  • 10 cups zucchini (squash), ground
  • 3 onions, ground
  • 5 tablespoons salt

After soaking

  • 2½ cups vinegar
  • 5 cups sugar
  • 1 red pepper, chopped
  • 2 green peppers, chopped
  • 1 teaspoon nutmeg
  • 1 teaspoon dry ground mustard
  • 1 teaspoon turmeric
  • 1 teaspoon cornstarch
  • 2 teaspoons celery seed
  • ½ teaspoon black pepper

Instructions

  1. Grind the zucchini and onions.
  2. Mix with salt and let set overnight (do not use an aluminum container).
  3. Rinse through two waters and drain very well.
  4. In a separate bowl, mix vinegar, sugar, red pepper, green peppers, and remaining spices.
  5. Pour mixture over the squash and onions.
  6. Cook for 30 minutes.
  7. Seal (can while hot).
