Ingredients
- 10 cups zucchini (squash), ground
- 3 onions, ground
- 5 tablespoons salt
After soaking
- 2½ cups vinegar
- 5 cups sugar
- 1 red pepper, chopped
- 2 green peppers, chopped
- 1 teaspoon nutmeg
- 1 teaspoon dry ground mustard
- 1 teaspoon turmeric
- 1 teaspoon cornstarch
- 2 teaspoons celery seed
- ½ teaspoon black pepper
Instructions
- Grind the zucchini and onions.
- Mix with salt and let set overnight (do not use an aluminum container).
- Rinse through two waters and drain very well.
- In a separate bowl, mix vinegar, sugar, red pepper, green peppers, and remaining spices.
- Pour mixture over the squash and onions.
- Cook for 30 minutes.
- Seal (can while hot).
